Menu for April 12th – 18th

I hope everyone had a wonderful Easter weekend! Ours had beautiful weather that allowed for a delightful Easter dinner on Brian’s grandparents patio. It was a lot of fun, and there was, of course, delicious food! We brought the salad this year (note to self – next time, put the sprouts on the side…  I saw an awful lot of them left on the plates at the end! ;))

This week is going to be a bit crazy…
I have several meetings planning for several different days this week, and my sister and I are taking the boys to the coast to “ride the dunes” with our (85 year old) grandfather on Wednesday/Thursday.  Good fun. But in the meantime, that means we need to plan our meals, and plan our pit stops (hurrah for potty training, right?? :)).  We will be eating out once,  because really, I LOVE Moe’s BBQ tri-tip sandwiches, and we HAVE to have one when we go to the coast.
It’s tradition.
And one of the rare times when my grandfather eats meat.

Sunday
breakfast: waffles, strawberries, whipped cream
Easter Dinner at Maple House
dinner: pasta, salad

Monday
breakfast: toast, fruit
am snack: yogurt, blueberries
lunch: pita sandwiches with sprouts, cheese, spring greens
pm snack: peanut butter and crackers
dinner: gingered sweet potatoes, green beans, salad

Tuesday
breakfast: fried potatoes, fried eggs
am snack: fruit gelatin
lunch: hotdogs with sauerkraut
pm snack: honeyed popcorn
dinner: spinach ravioli, salad

Wednesday
breakfast: fried cornmeal mush, fruit
am snack: peaches and cream
lunch: potatoes with creamy mushroom sauce, mixed vegetables
pm snack: whole wheat pretzels, applesauce
dinner: chili, cornbread, salad

Thursday
breakfast: oatmeal, berry compote
am snack: bananas, graham crackers
lunch: egg salad sandwiches, veggie sticks, dip
pm snack: cheese, apples
dinner: tri-tip sandwiches, veggie sticks, dip

Friday
breakfast: scrambled eggs, toast, fruit
am snack: dried cherries, almonds
lunch: turkey sandwiches, tomato soup
pm snack: fruit slices, yogurt dip
dinner: lentil and potato soup, bread, salad

Sabbath
breakfast: puffed apple pancake
Church Picnic in the Park
dinner: popcorn, fruit, cheese

Prep Schedule

Sabbath evening:
soak flour for waffles

Sunday evening:
-marinate sweet potatoes

Monday evening:
-make fruit gelatin
-defrost raviolis

Tuesday evening:
-soak masa for mush/cornbread
-soak beans

Wednesday evening:
-soak oatmeal
-hardboil eggs

Thursday evening:
-make yogurt dip
-soak lentils

Friday afternoon:
-soak flour for puffed pancake
