Menu for May 3rd – 9th

Nice basic menu this week – nothing too complicated…
I’m going to try the samosas from Nourishing Traditions,
we’ll see how they turn out…

I’m also going to be using some fish we caught last summer on Brian’s birthday deep sea fishing trip… it’s been waiting in the freezer for me to do something with it, and this seems like a good week for fish and chips šŸ™‚

I’m also going to be hitting the Farmers Market this week, hoping to get some good deals on strawberries, and possibly some asparagus… We’ll see what else I manage to walk out with.

Menu
Sunday
breakfast: baked oatmeal, fruit salad
lunch: masala vegetable patties, yogurt, fresh peas
dinner: lasanga, bread, salad

Monday
breakfast: fried eggs, potatoes, toast
am snack: crispy walnuts, dried cranberries
lunch: spicy meatloaf (NT recipe), mixed vegetables
pm snack: apple slices, peanut butter
dinner: taco salad

Tuesday
breakfast: breakfast burritos with eggs, beans, cheese, salsa
am snack: frozen cherries, yogurt
lunch: white bean hummus, pita bread, salad
pm snack: lemonade popsicles
dinner: potato samosas, cucumber salad

Wednesday
breakfast: scrambled eggs, toast, fruit
am snack: snack sticks (breadstick recipe rolled in soaked seeds)
lunch: cheesy quesadillas, guacamole
pm snack at the Farmer’s Market
dinner: fish n chips (breaded and panfried fish, with oven roasted fries)

Thursday
breakfast: buckwheat pancakes, berry syrup
am snack: bananas, chopped nuts
lunch: lentil soup, rolls
pm snack: peanut butter and honey sandwiches
dinner: spaghetti, meatballs, salad

Friday
breakfast: tropical milkshakes (egg yolks, milk (or yogurt), frozen pineapple, banana and mango
am snack: cheese crackers, apples
lunch: sprout sandwiches (there was a fantastic “spicy” mix at the Farmers Market this week)
pm snack: strawberry milkshakes
dinner: Mediterranean bean soup, bread, salad

Sabbath
breakfast: cherry puffed pancake, sweetened cream
lunch: grilled asparagus, chicken, salad
dinner: popcorn, fruit

Prep Schedule

Sabbath evening
– soak oatmeal
– shell peas

Sunday evening
-boil potatoes
-defrost beef for meatloaf
– defrost beans for taco salad

Monday evening
– boil/marinate potatoes for samosas
– marinate cucumber for salad

Tuesday evening
– defrost fish

Wednesday evening
– soak flour for pancakes
– defrost berries for syrup
– soak lentils for soup
– make meatballs?

Thursday evening
– make cheese crackers
– soak beans for soup

Friday afternoon
– soak flour for puffed pancake
– defrost chicken
