Menu for June 21st – 27th

Photobucket

Another fantastic week in the garden! We’re consistently eating at least SOMETHING from it each day, and I’m really quite pleased with the amounts we’re getting – heaven help me when those tomatoes finally ripen! 🙂

I found a turban squash hidden under some leaves, and it’s shocking how big it’s gotten just in the last week…
I am looking forward to definitely more eggplant dishes in the next few weeks – the plants themselves are so pretty, and so far not a single one has been bitter! 🙂

    • I use a recipe I found in a book called “Eating God’s Way”. Basically, you’re breading (egg, then a mix of whole wheat flour/cornmeal) and frying the slices of eggplant, then layering in a pan (I just use the one I fried the stuff in) with sauce, and then sprinkling cheese on top – bake at 350 for about 20 minutes. It’s a time consuming dish, with the breading and everything, but it’s definitely worth it for the taste.
