Menu for June 28th – July 4th

Lord, have some mercy…
As I sit here on Sunday night, at 9 o’clock in the evening,
I am horrified to look at the thermometer on the wall outside and see that it reads
96 degrees.
9 o’clock. AT NIGHT.

So to say that I’m having some trouble coming up with menu ideas for this week would be an understatement.
Particularly because it looks as though this week’s high temperatures will be running between 106-110 degrees.
So let’s turn the oven on, right??
(and yes, I’ll skip on the pity party and not complain that I only have a swamp cooler to keep our home cool… 😉 )

Add to that, no one seems to want to eat anyway!
I managed to get an ear of (raw) corn into the boys, and a few pieces of melon
but anything else was met with a “No, thanks, Moma, I’m full.
Brian took 3 ears of corn with him to work, and didn’t think he’d want a sandwich to go with it.
So really, what AM I going to have on the menu?!
(Cos, um, I’M HUNGRY!!)

Here’s my attempt:
MENU
Sunday
Camping trip to the Lake
breakfast: pancakes, eggs, potatoes, blueberries
lunch on the boat: cheese and tomato sandwiches
dinner: corn, melon, salad

Monday
breakfast: rice porridge, apricots
am snack: frozen cherries, yogurt
lunch: quesadillas, carrot sticks, ranch dip
pm snack: kombucha popsicles
dinner: spaghetti squash with tomato sauce, salad

Tuesday
breakfast: toast, eggs, plums
am snack: apricot fruit leather
lunch: macaroni and cheese, green beans, ranch dip
pm snack: kefir popsicles
dinner: corn on the cob, bread, salad

Wednesday
breakfast: hashbrowns, eggs, nectarines (hopefully they will be ready! Almost!)
am snack: frozen peach smoothies
lunch: tuna sandwiches, celery sticks
pm snack: ginger-lemon popsicles
dinner: pasta, fresh tomato sauce, salad

Thursday
breakfast: vegetable frittata
am snack: whole wheat crackers, peanut butter
lunch: egg salad sandwiches, veggie sticks
pm snack: kefir smoothies
dinner: fried potatoes, green beans, salad

Friday
breakfast: oatmeal with fruit
am snack: fruit salad
lunch: green bean salad, garlic bread
pm snack: kombucha popsicles
dinner: garden vegetable soup, bread, salad
