Menu for July 5th – 11th

Ahh… the joys of gardening!
As I sit here blissfully staring at a basket full of lovely items we gleaned earlier this morning from our garden!
Today was quite fulfilling (okay, other than the jalepeno jelly that never set).
My father and I put up over a gallon of peaches this morning,
and nothing is more exciting than seeing all those lovely bags of peaches sitting in the freezer.
Except, perhaps, the gallon bags of green beans that are right next to them! πŸ™‚
That makes a total of 2 gallons of green beans in the freezer,
with more still to come over the next few weeks.
In the meantime, our menu is liberally sprinkled with garden produce.
Liberally.

Menu
Sunday
breakfast: whole wheat pancakes, sliced peaches, sweet cream
lunch: tomato sandwiches, turkey-carrot-rice soup
dinner: nachos with homemade refried beans, fresh salsa (wow-spicy!), and soured cream

Monday
breakfast: vegetable frittata with potatoes, eggplant, tomatoes, onions… and maybe a green bean.
am snack: sliced peach half with cottage cheese
lunch: black bean and corn quesadillas (l/o refried beans), salsa
pm snack: cucumber slices, ranch dip
dinner: pasta with fresh tomato sauce, salad, rolls

Tuesday
breakfast: soaked oatmeal with raisins and peaches
am snack: mozzarella cheese, cherry tomatoes
lunch: potato salad, green beans
pm snack: orangina (it’s the fermented orange juice πŸ˜‰ from NT) popsicles
dinner: zucchini in yogurt sauce, brown rice, salad

Wednesday
breakfast: veggie omelets with zucchini, tomatoes, onions, cheese
am snack: peach sauce (basically, applesauce with peaches instead of apples… delicious!), graham crackers
lunch: raviolis, swiss chard
pm snack: frozen banana pops
dinner: sweet potatoes, black eyed peas (fresh from the garden! yay!), salad

Thursday
breakfast: sweet potato pancakes, fruit
am snack: plums, cheddar cheese cubes
lunch: baked beans, coleslaw (frozen from cabbage season πŸ˜‰ )
pm snack: green beans, ranch dip
dinner: pav bhaji, naan bread, salad

Friday
breakfast: egg pockets (using l/o naan)
am snack: almonds, apricot fruit leather
lunch: grilled cheese with tomatoes
pm snack: roasted spaghetti squash seeds, peaches
dinner: tomato-basil soup, cheddar cheese bread, salad

Sabbath
breakfast: french toast casserole with peaches
lunch: tabouleh, pita, green salad
dinner: popcorn, fruit salad
