Menu for July 19th – 25th

We are settling into a rather tight few weeks of a food budget…
Brian quit his night job (THANK YOU, LORD!) to allow for more family time,
but in the meantime, that means we’re less that income,
and we’re beginning to feel a bit of a pinch until some student aid money comes through.

In the meantime, we are continually blessed to have a garden that produces abundantly,
and I am also blessed that with Brian home for a few more hours per day,
I’ll have help to put in even MORE garden to prepare for the months ahead.
Praise God! (more on that tomorrow!)

: grilled cheese & tomato sandwiches

: popcorn balls, grapes
dinner: cheesy pasta bake, peas, salad

Wednesday

: biscuits, eggs, fruit

: crackers, peanut butter

: enchilada bake, salad
pm snack
: tortilla chips, salsa
dinner
: sweet potato fries, beet greens

Thursday
breakfast
: rice pudding with raisins

: yogurt, blueberries

: quinoa and millet pilaf, mixed vegetables
pm snack
: trail mix, grapes
dinner
: tamale pie, salad

Friday
breakfast:
cornmeal mush, grapes
am snack:
applesauce, graham sticks
lunch:
Mexican roasted potatoes, green beans
pm snack:
dried fruit, crackers
dinner:
bean soup, garlic bread, salad

Sabbath
breakfast:
baked fruit pancake, sweetened sour cream
lunch
: Uncle Steveโ€™s Roast, mixed vegetables, mashed potatoes
dinner: popcorn, fruit

  1. Yea for gardens! I love ours, and am always amazed at how you can throw together a meal out of almost nothing when you’ve got fresh produce from the backyard. ๐Ÿ˜‰

  2. How were the Aebelskivers on Sunday? Most people don’t know what they are so I was surprised to see it on your menu. Also, can I ask what religion you are? Just curious ๐Ÿ™‚
