Menu for December 19th – 25th

It’s the week before Christmas!
I enjoy this time of year almost as much as Thanksgiving, and I’m doubly excited because this puts us 2 weeks from my sister’s wedding!

Here’s this week’s menu, with some of my favorite holiday favorites:

breakfast: gingerbread pancakes, winter fruit salad
lunch: roasted chicken, baked potatoes, glazed carrots, salad
dinner: snack platter – cold cuts, cheese, pickled beets

breakfast: pumpkin yogurt w/pecans & coconut, gingerbread muffins
am snack: apples, raw cheese
lunch: potato soup, garlic bread
pm snack: popcorn, oranges
dinner: chicken stir-fry, brown rice noodles

breakfast: soaked baked oats w/pumpkin, cranberries, walnuts & cream
am snack: orange gelatin, cream
lunch: hard-boiled eggs, steamed kale, lacto-fermented carrots
pm snack: apples, raisins
dinner: chicken enchiladas, spanish rice, salad

breakfast: baked apples w/raisins, cranberries, pecans, cream
am snack: cheese, sourdough crackers
lunch: out
pm snack: peanut butter toast, oranges
dinner: beef roast w/apples & onions, mashed sweet potatoes

breakfast: scrambled eggs, sourdough toast
Cookie Baking Day at Aunt Johanna’s
dinner: vegetable gratin, l.o. beef roast, steamed spinach

breakfast: bacon & egg cups, toast
am snack: pumpkin pudding
at Maple House for Christmas Eve
dinner after Christmas Eve service

Christmas Sabbath
breakfast: baked apple French toast, bacon
lunch at the Farm for Christmas
dinner: popcorn balls, winter fruit salad
